Maintaining Dormant Commercial Dishwashers & Glasswashers

We are well aware of the effect the pandemic is having on our industry. If you are in a position where it is safe to do so, there are key measures you should take to protect your equipment during periods of closure. These steps will prolong the life of your machine and ensure it is safe to use again in the future.

Commercial Dishwasher and Glasswasher Shut Down Procedure

  • If the commercial dishwasher or glasswasher is to be out of use for an extended period, the detergent and rinse-aid dispenser devices must be emptied completely to prevent crystallisation and pump damage. Remove the intake hoses from the detergent and rinse-aid containers and place them into a container of clean water. When handling chemicals, follow the safety guidelines provided by your chemical supplier and use appropriate Personal Protective Equipment (PPE).
  • Perform at least 20 wash cycles to remove any detergent or rinse aid residue from the machine.
  • Drain the commercial dishwasher or glasswasher completely.
  • Remove and clean the filters. Take care that no large debris falls into the sump underneath. Clean the filters thoroughly, rinse with water, dry, and refit.
  • Remove and clean the wash and rinse arms. Clean holes and nozzles under clean running water and allow them to dry completely before refitting.
  • If the machine has an internal water softener, ensure no salt residue is left in the wash tank area.
  • Ensure the wash tank is completely clean and fully dry internally.
  • Turn off the water and electrical supplies to the machine.
  • Leave the door ajar to allow ventilation. However, if there is a risk of dust, insects or pests entering, you may need to close it. Use your judgement. Before restarting the appliance, carry out a thorough clean and inspection.
  • Once the machine is fully dry, close the door and clean and degrease the exterior.
  • Leave a note by the machine reminding staff to turn on the water and electrical supply when recommissioning, and to reconnect the detergent and rinse-aid.
